Dang, is it still your birthday Robbie? We only get 24 hours over here. Aside from the cheese factor, that's reason enough to emigrate, but when you factor in the cheese, well . . .

PS> I recently was introduced to a new (to me) cheese - Havarti - Somehow in my 63 years of life, I had never come across Havarti. Now, I've had it and am pretty excited about it, but no one here in my immediate circle of friends is impressed that I could be so excited about a cheese. Got me to thinking - "Well, I know somewhere where the citizens appreciate cheese in all its wondrous varieties" and that thought, of course led me back to Dijonstock - just a couple of weeks too late to help celebrate Robbie's birthday - but greetings none-the-less.

Also, the 16G is sitting in the basement - unused for the past several years - but I have a couple of new songs I need to record - just hope I remember how to use it. I do remember the learning curve was pretty steep - we'll see if that has as happy an outcome as did my experience with Havarti.

Hiya Carey, great-great-great-grandson of Cor, from the Netherlands. Thanks! Wonderful to see you again.

Ah... Havarti. It's been on my wish list for ages. Haven't seen it anywhere (yet). So I'm unfamiliar with its taste. I'ver never come across a Danish cheese I didn't like though. So hopes are high that, if ever I can get my hands on a chunk, I'll like it.

How would you describe the taste? Does it compare to any other cheeses you know?

I would expect two and a half year old Havarti to have a vocabulary of several hundred Danish words, and, of course, to have been walking for about eighteen months already.

Those Danes don't coddle their cheese, although they're famously lenient when it comes to raising pastry.

It's good to be back. As for the taste of Havarti, I would say it's a mild, firm cheese. Somewhat like a muenster with a creamy almost buttery aftertaste.
