the dad and lad bake off is on the 20th and i need a swell cake recipe.
the themes are holiday, family fav, or traditional. i'd like to do holiday.
anyone got one that looks delightful and taste even better?

YES! Here's my favorite:

Go to good bakery.

Buy cake.

Destroy cake box.

Place cake on favorite cake plate at home while son is in school.

Enjoy the victory!

Before son arrives: make oven hot to make him believe.

One minute before arriving: put the cake in the microwave for about 30 seconds. He'll believe it even more.

If I'm gonna eat cake it's got to be chocolate.


EASY CHOCOLATE CAKE

1 c. mayonnaise
1/2 c. cocoa
1 c. sugar
2 c. flour
1/2 tsp. salt
1/2 tsp. vanilla
2 tsp. soda in 1 c. water

Preheat oven to 350 degrees.
Sift dry ingredients together except the soda. Add to mayonnaise - alternately, flour, then water and soda.

Fold in 1 teaspoon vanilla and bake in moderate oven at 350 degrees F.

Bake 30 minutes in greased and floured 11 1/4 x 7 1/2 x 1 1/2 inch pan.

EASY CHEESE CAKE

1 (8 oz.) cream cheese
1 regular size tub of Cool Whip
1 c. sugar
1 graham cracker crust
1 can pie filling

Mix cheese, Cool Whip and sugar. Pour in graham cracker crust. Chill top with favorite pie filling.

I'm a big fan of the Cake Mix Doctor books. Lots of great stuff there. My fave is a banana cake with caramel frosting - not real pretty and not really holiday-ish either, but tasty. 8)

Check them out at the local bookstore if you're so inclined.


edit: the above mentioned banana cake definitely falls into the family favorite category at my house. Does it have to be your family's favorite? :D

It sure does, as do some of those BBC recipes. Rather intrigued with the idea of chopping up chillies and putting them in chocolate cake.

It's not chocolate, but it's the next best thing.

Caramel Cake and Frosting
Grease and flour two 9-inch round cake pans
Place rack in center of oven and preheat to 350 degrees

1 box spice cake mix
1 cup whole milk
8 tablespoons (1 stick) butter, melted
3 large eggs
2 teaspoons pure vanilla extract

Place cake mix, milk, melted butter, eggs and vanilla in large mixing bowl. Blend with a mixer on low speed for 1 minute. Stop and scrape down the sides, increase the speed to medium and beat 2 additional minutes. Divide the batter between the two pans and bake until golden brown and it springs back when lightly pressed with your finger, 27-29 minutes.

Place pans on wire rack to cool for 10 minutes. Run a dinner knife around the edge and invert onto a rack. Then invert again onto another rack so the cakes are right side up. Cool completely, about 30 minutes. Spread with frosting.

Carmel Frosting
8 tablespoons (1 stick) butter
½ cup dark brown sugar
½ cup light brown sugar (I use all dark sugar)
¼ cup whole milk
2 cups confectioners’ sugar SIFTED (very important)
2 teaspoons pure vanilla extract

Place the butter and brown sugar in a medium-sized saucepan over medium heat. Stir and cook until the mixture comes to a boil, about 2 minutes.

Add milk, stir and bring back to a boil, then remove from heat.

Add powered sugar and vanilla and beat with a wooden spoon until frosting is smooth.

Use immediately (while still warm) to frost the cake or the frosting will harden. If it does, simply place the pan back on low heat and stir until it softens up.

BTW - i ended up doing a pumpkin dump cake.
i chose that so that matt could get some hands on.
i f'd up royally tho, by icing it.
shellacked!
i wanted a white glaze so we could decorate.
we took 6 out 6 in the holiday category.... :oops:
next year.......... :x
